In France, where Pinot Grigio originated. Believed to be a mutation of Pinot Noir because it is a darker than the normal white grape. The colour of wines produced with Pinot Grigio is generally more intense than most white wines. The Italian version is an exception, being much lighter in colour. In Italy, the best vintages of Pinot Grigio are produced in the Northeast, where they are harvested early to maintain acidity and lightness. All this creates a Pinot Grigio which has a delicate and fresh flavour.
